Embrace Your Irishness


  1. On St. Patrick’s Day tomorrow, everyone is a little bit Irish. Some more than others, of course. Embrace your Irishness!
  2. Check out the recipes below and go shopping for those ingredients today!
  3. Prepare a crockpot of corned beef and cabbage (you can do it today… it’ll taste better tomorrow after it sits in its flavorings overnight)
  4. Play a medley of Irish jigs and reels to keep you in the mood
  5. Bake some Irish cupcakes for dessert (see recipe from Better Homes & Gardens below)

Corned Beef and Cabbage

Synonymous with American St. Patrick’s day celebrations, corned beef and cabbage is the perfect hearty meal for a chilly mid-March night. Though this slow cooker version can be done in 4 to 4 1/2 hours on high, the brisket cooks best low and slow. If you’re looking to venture outside the spice packet, try out the homemade blend on this corned beef brisket.

Prep Time: 30 mins
Total Time: 9 hours

INGREDIENTS:

2 or 3 medium yellow onion, cut into large wedges

2 or 3 large carrots, cut into thirds

1/2 lb. stalks celery, cut into thirds

8 to 12 baby potatoes, halved

2-3 lb corned beef brisket 

1 tsp. kosher salt

1 tsp. freshly ground black pepper

2 or 3 Tblsp. pickling spice

2 sprigs thyme

2 or 3 bay leaves

1 head of green cabbage, cut into large wedges

Directions

  1. Add onion, carrots, celery and potatoes to bowl of your crock pot. Place corned beef on top and season generously with salt, pepper, and pickling spices. Scatter thyme and bay leaves over meat and fill slow cooker bowl with water until it is almost completely covering the meat.
  2. Cook on low for 9 to 10 hours, or on high for 4 to 4 1/2 hours, until meat is tender. Add cabbage to crock pot and cook on high for 45 minutes to 1 hour more until cabbage is tender and cooked through. Remove meat and vegetables from slow cooker, slice and serve.
Hide a few 4 leaf clovers under the dinner plates…

Pot O' Gold Guinness Chocolate Cupcakes

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ¾ teaspoon salt
  • 1 cup butter
  • 1 cup Guinness stout
  • ¾ cup special dark cocoa powder (such as Hershey’s)
  • 1 tablespoon instant coffee granules
  • 1 ½ cups granulated sugar
  • ½ cup packed brown sugar
  • 2 teaspoons vanilla
  • 3 eggs
  • ¾ cup sour cream
  • 1 ½ cups butter, softened
  • 5 cups powdered sugar
  • 6 tablespoons Irish cream liqueur or caramel-flavor coffee creamer
  • ⅓ cup butterscotch-caramel sauce (such as Mrs. Richardson’s)
  • ½ cup assorted green and/or gold sprinkles

Directions

  • Step 1 – Preheat oven to 350°F. Line twenty-four 2 1/2-inch muffin cups with cupcake liners. In a large bowl whisk together flour, baking soda, baking powder, and 3/4 teaspoon salt.
  • Step 2 – Melt the 1 cup butter in a saucepan over medium-low. Once melted, remove from heat and stir in Guinness, cocoa powder, instant coffee, and granulated sugar. Continue stirring until smooth.
  • Step 3 – In the bowl of an electric mixer combine brown sugar and 1 teaspoon of the vanilla. Add melted butter mixture and beat on medium-low until cooled. Reduce to low. Add eggs one at a time, beating after each addition until eggs are incorporated.
  • Step 4 – With mixer on medium, add flour mixture alternately with sour cream, beating until combined and scraping down the sides of the bowl as necessary. Divide batter evenly among muffin cups. (They will be nearly full.)
  • Step 5 – Bake 18 to 20 minutes or until a toothpick inserted in the centers comes out clean. Let cool in pans 5 minutes; remove to wire rack. Let cool.
  • Step 6 – For frosting: In the bowl of an electric mixer beat the softened butter on medium-high until creamy. Reduce speed; add powdered sugar, liqueur, caramel sauce, and the remaining 1 teaspoon vanilla. Increase speed to medium-high; beat until frosting is smooth and fluffy.
  • Step 7 – Push the large end of a large pastry tip into center of each cupcake, twist to remove a plug of cupcake; set plugs aside. Fill each cupcake with approximately 1 teaspoon of the sprinkles. Trim off half the cupcake plugs and place in holes to seal in sprinkles. Pipe or frost cupcakes. Makes 24 cupcakes.

Soup Exchange


Have you ever participated in a soup exchange?
I’ve been to several cookie exchanges,
but today was my first soup exchange.

With most containers of soup, a recipe was provided.

This recipe was attached to a jar of soup ingredients.
What a great idea…
we get to dump it into 7 cups of water
and make our own!

We got to take a quart of each soup home with us.
And we had a tasting party before we left.

I brought this one. No way I could begin to give you a recipe. It had clam chowder, cheddar cheese, potatoes, onions, fresh crab lumps, garlic, etc. A menagerie that turned out pretty tasty!

We didn’t get a recipe
for this “Barefoot Contessa Corn Chowder” either.
But, it was deeelicious.
It had big potato chunks
and bacon in a creamy corn broth.

Here’s a recipe for a soup that was not present. Chicken Parmesan … I don’t have one of those new-fangled slow cookers, but I bet my old crock pot would work just fine. The ingredients sound wonderful. I am going to make this as soon as we finish up all the samples I brought home.

Love One Another

You may be wondering how this post fits my blog’s theme of “Loving One Another.” (Or maybe you’re not wondering at all.) Anyway, you know that one of the ways we show our love for one another is at meal time.

“The way to a man’s heart is through his stomach,” is an age-old saying that I have found to be quite true.

And a good way to show our love to our family and friends is to invite them to a feast. It’s an age-old practice.

We like to host pot-lucks for our friends in the “hood.” Everyone brings a favorite dish and we enjoy fun, food and fellowship.

At church, potlucks are a regular occurrence. I think I am going to suggest our church host a soup exchange one of these Sundays. But, I will ask people to bring their own quart jars to fill. Today we brought our soup assortment home in zip lock plastic bags. That was a bit awkward. But it worked.

Oh, BTW, this was my view of Fan Mountain on my way home.

A Great Smoothie


We purchased some pears at CostCo this week. If you have ever shopped CostCo, you know there’s no such thing as buying a “little bit” of anything. So, when we had a pear for breakfast this morning and realized they are perfectly ripe, ready to eat now, I wondered, “What am I going to do with all these pears?”

I have six more…

Then I began reading the CostCo magazine that came in this week’s mail.

In the Farm to Table section, there was a perfect answer to my dilemma – Pear and Pumpkin Protein Smoothie. Take a look:

  • other bloggers who can help him/her remain inspired or learn new skills or just laugh a little

Don’t be Afraid to Improvise

I recently had an abundance of carrots that needed to be used. I googled “Carrot Soup” and discovered this wonderful new (to me) site called “Eating Well.” The carrot soup recipe is simple and easy.

I followed the recipe, but when I was finished, I decided it needed some enhancement. I went back to the site on a quest for enhancement ideas. Right next to that recipe was one that added curry to the soup. We love curry. Also, I wanted it to be a bit creamy. I had some half and half on hand. I added that.

You know, when you are on a quest for improved flavors, improved health or attitudes, improved life-styles … you name it … you have to be adventuresome! Mix it up.  Improvise. Think outside the box!

Think Outside the Box

Recently I have been on a quest for ideas to enhance the birthday party for my great-grandson. It’ll be at our house this Saturday. He’ll be two on Sunday. We have about 25 friends and in-law-family of my granddaughter coming to join us. What can we do besides eat and socialize?

I asked Siri. She led me to fatherly.com, a website with an article titled, “20 Original Ideas for a Second Birthday Party.” From a rainbow party to a fairytale fete, these birthday themes are touted to be perfect fits for two-year-olds.

The article on fatherly.com said,
“They have simple tastes.
They want cake,
shiny things to wave about,
and to run free…
Second birthdays should be glorious play dates.”

I pray for good weather, and I pray that my granddaughter will have other two-year-olds here for my great-grandson to play with. But, whether she does or not, the ideas I discovered on this site satisfied my quest for answers to “What can we do besides eat and socialize?”

Balloons sounded like a great idea to me. If our unpredictable Montana weather is bad that day, balloons can hit furniture and not put dents in it!

Now, we need to choose a theme –  and get busy. Thinking outside the box can sometimes result in extra work. Don’t be afraid of it!

Let Your Quest Quicken Your Faith and Deepen Your Soul

If one of your quests is like mine: to look for clearer direction or purpose for life, what questions do you ask? Where do you go for answers?

My go-to source for such answers is clear to you if you have read any of my other posts. Rarely do I leave you without a reference to God, to the Living Lord who walked on earth and showed us the Way, or a reference to Scripture. I will not disappoint you this time either.

It’s not just Google or Siri to whom I turn when I have questions. They are a great help when it comes to history, places, recipes, party ideas… but when it comes to matters of the heart and soul, nothing beats the Good Book!

Use the Bible’s Concordance

My NIV (New International Version) Study Bible has a great concordance. I can look to the back of the Book for words that reference my questions. It will list all the places in the Bible where the idea I am seeking is mentioned.

For instance, when I was concerned about a friend who was excessively worrying, I went to the word “Worry” in the Concordance. I found the perfect scripture to add to the card I was sending to my friend.

Phil.4:6-7 “Don’t worry about anything, instead pray about everything. Tell God what you need, and thank Him for all He has done.Then you will experience God’s peace, which exceeds anything we can understand. His peace will guard your hearts and minds as you live in Jesus Christ.”

Thrill to the Quest

Let the references from Siri, the links you find on Google, and the assurance of Scripture never fail to thrill you! Technology is amazing. But so is our Certain Help in times of trouble. Don’t forget to call on the Lord. Pray!! When all else fails, He will never fail you!

Day #19 in the A-Z series of “What Makes Me Happy?”

SUNSHINE

You expected that would be my S word, didn’t you?

I mean, just look at my header up there!

Yes, sunshine makes me happy!

But look out there this morning…

Sunshine’s late today

Get up? But it’s still dark out!

Daylight saving’s time

.

I’m not a fan of dark, rainy mornings.

Sunshine, Light, and Love make me happy.

But on dark and rainy days like this one,

The other S word that makes me happy

Is SOUP!

Ah yes, I think I’ll go

Get a crockpot started now.
